Fruit & Nut & Everything But (Refined Sugar) Cookies

YIELD: 38 Cookies
2 cups whole wheat flour (or combination of flours, such as: quinoa, barley, spelt, kamut etc…)
1/4 cup skim milk powder
1/4 cup vanilla protein powder
2 tbsp. wheat germ
2 tbsp. ground flax seeds
1 tsp. baking powder
1/2 cup chopped dates
1/2 cup chopped papaya
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup slivered almonds
1/3 cup healthy cooking oil
1/4 cup agave nectar (or honey)
1/4 cup molasses
Finely chop the dried fruit or cut using clean kitchen shears.
Combine dry ingredients in a bowl.
In a separate bowl, beat eggs with the oil, agave nectar & molasses.
Add dry ingredients to wet mixture and stir to combine.
Add the fruit & nuts.
Bake at 350oF for 10 mins. or until slightly brown around edges.
